My Homemade Granola Recipe

Low sugar granola using coconut oil, apple juice + maple syrup to sweeten

This low sugar granola recipe goes perfectly with a dollop of Greek yogurt + fresh fruit for a healthy start to the day or as a mid afternoon snack! These are the quantities but to be honest, I tend to make it up + add in whatever nuts or seeds I have in the house!

  • 9 cups old-fashioned rolled oats1 cup walnuts , chopped
  • 1 cup chopped walnuts
  • 1 cup chopped almonds
  • 1 cup chopped hazelnuts
  • 1 cup pumpkin seeds
  • 1 cup unsweetened coconut flakes (optional)
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups apple juice
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 1/4 cups raisins/cranberries

  • Preheat oven to 170C. Melt the apple juice, coconut oil, maple syrup together. Toss the rolled oats, nuts, coconut and cinnamon in a large bowl. Mix everything together.
  • Place on a baking tray + bake in the oven for approx 25 mins until golden brown. Do not over cook! It will cook a little more when you bring it out. Cool + then transfer to a jar. Voila!
