Butter Bean Caprese

A caprese salad with a hearty twist using Queen Butter Beans from Bold Bean Co - perfect as a lunch with a slice of sourdough to mop up the dressing!


8 Ripe plum tomatoes sliced

2 Balls of mozzarella sliced

1 x 700g jar of Bold Bean Co Queen Butter Beans (x 2 400g cans drained)

For the dressing

3 tbsp olive oil

2 tbsp balsamic vinegar

2 tsp honey or maple syrup

A handful of fresh basil leaves - plus extra leaves to garnish

1 garlic clove, grated


1. Arrange the sliced tomatoes in a shallow dish + sprinkle with sea salt

2. Add all the dress ingredients to a jar with some cracked pepper + give a good shake. Add more seasoning if necessary.

3. Spread half butter beans onto dish then layer with tomatoes + mozzarella then later up the rest.

4. Pour over dressing + finish with torn fresh basil + pine nuts. Voila!
